Recipe Ingredients for GreenChicken Chili

1 lb chicken breast
12 oz great northern beans
48 oz organic chicken stock
7 oz diced green chiles (1 large can)
1 medium onion
1 tbsp olive oil
2 cloves garlic

Recipe Directions for GreenChicken Chili

  1. Poach chicken breasts in a small amount of water until cooked through.

  2. Begin cooking beans in water.

  3. In a large dutch oven, saute onion and garlic in the olive oil.

  4. When beans are tender and chicken is poached through, put them in the dutch oven, add the chicken stock, and simmer for 2-ish hours (until the beans are tender).

  5. Add the can of diced green chile, salt and pepper to taste. Heat through.
