Rachel Ray Recipe Broccoli Rabe and Potatoes Frittata

Recipe Ingredients for Green & White Frittata

5 tbsp Extra Virgin Olive Oil
1 large (3" to 4-1/4" dia.) Potatoes, Boiled
1/4 cup chopped Scallions
3 clove Garlic
6 stalk Broccoli Rabe
4 large Egg, Whole
8 large Egg, White
4 oz Pepper Jack Cheese
1/4 tsp Sea Salt
1 tsp Pepper, Black

Recipe Directions for Green & White Frittata

  1. Position broiler rack 3 inches from heat and preheat broiler.

  2. In an oven proof skillet heat 2 tbsp of EEVO over medium heat, add potatoes, peeled and cut into 1/4 pieces and the scallion whites, thinly sliced, stiring occasionally until potatoes are tender, about 8 minutes. Transfer to a plate with a slotted spoon.

  3. Add 2 tbsp EVOO to the pan and heat over medium-high heat. Add three cloves of garlic thinly sliced and cook for 30 seconds. Add the broccoli rabe, cut crosswise into 1/4 in., pieces. Season with salt and pepper, cook, tossing, until the leaves are wilted and the stems are tender crisp.

  4. Reduce heat to medium, return the potatoes to the pan, add the scallion greens and gently smooth the veggies into an even layer.

  5. Whisk together eggs and egg whites and pepper jack cheese shreaded, salt and pepper to taste. Pour egg mixture into skillet and cook until set around the edge of the pan but still wet and jiggly on top, 6 to 8 minutes.

  6. Broil until just set, 2 to 3 minutes.

  7. Remove from oven, run knife around the edge of the pan to loosen the frittata. Cut into wedges and serve. Enjoy
