Green Vege Rice Risotto Recipe

A scratch made rice risotto using a combination of green veges. Substitute chicken stock for vege stock to make this a vegan meal.

Recipe Ingredients for Green Vege Rice Risotto

2 tbsp oil
1 onion
2 cloves of garlic
300 g arborio rice
150 ml white wine
4 cups chicken stock
150 g green beans
1 courgette
2 bell peppers

Recipe Directions for Green Vege Rice Risotto

  1. Slice bell peppers into large slabs and place in oven at approx 200 degrees. Remove once they just start to blacken.

  2. Put stock in saucepan and set to a low simmer.

  3. Put oil, onions and garlic in a frying pan and cook till translucent.

  4. Add rice and cook for a short amount of time.

  5. Add white wine and let simmer till wine is almost gone.

  6. Add a measure of stock (~0.75-1 cup).

  7. Once stock is almost absorbed add green beans.

  8. Keep adding stock each time it is almost all absorbed until you have only one measure left.

  9. Add thinly sliced courgette.

  10. Add last measure of stock.

  11. Add sliced roasted peppers.

  12. Add pepper to taste and grated parmesan cheese if desired.
