Green tuna melt, with zucchini instead of bread.

Recipe Ingredients for Green Tuna Melt

4 1/2 oz tuna in water, drained
1 medium zucchini
2 1/2 slices colby cheese
1 tsp dijon mustard
1 dash salt
1 dash pepper

Recipe Directions for Green Tuna Melt

  1. Slice zucchini into 4 thin slices and put under a very hot grill or broiler. Remove when it blackens.

  2. Flip to uncooked side and spread with mustard. Top with tuna and press down gently to form a mass. Top with cheese and season.

  3. Put under grill and reduce heat to medium low. Broil until cheese is melted and beginning to brown. Serve with green salad.
