use less red onion, more corn. make sure green tomatoes are full size. add sugar or stevia to taste. how about adding some pomegranate seeds?

Recipe Ingredients for Green Tomato Salsa

19 oz green tomatoes, chopped
1 chili pepper, fresh yellow or jalapeno pepper, seeded, chopped fine
1 cup red onion, chopped (approx 1 sm onion)
3 T lime juice
3 t lime zest
1 T red wine vinegar
1 T balsamic vinegar
2 c corn kernels
3 oz tomato, chopped

Recipe Directions for Green Tomato Salsa

combine all chopped ingredients in bowl. let sit at room temp to mariante. serve. chill. serve again.
