Lovely green thai curry made with coconut milk and plenty of vegetables

Recipe Ingredients for Green Thai veg curry

100 grams Chicken
1 medium (2-1/2" dia) Onions
2 sweetpotato, 5" long Sweetpotato
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
200 grams Cabbage, Red
100 grams Sugar Snap Peas
1 cup sliced Mushroom, Oyster
4 cup Spinach
5 medium (4-1/8" long) Onions, Spring Or Scallions
250 grams Blue Dragon Green Curry Paste
350 grams Blue Dragon Coconut Milk
75 grams Co-op reduced fat crème fraiche

Recipe Directions for Green Thai veg curry
