Use Light Coconut milk to cut fat from 14g/serving to 4g/serving. Hot peppers are serranos.

Recipe Ingredients for Green Thai Curry

2 hot peppers
2 jalapeno peppers
1/2 cup water
2 tsp coriander seeds
1 tsp cumin seeds
5 black peppercorns
1 tbsp chopped lemongrass
1 tbsp fresh ginger
3 cloves garlic
1 cup cilantro
2 tsp lime zest
1 cup shallots
5 tbsp peanut oil
12 oz firm tofu
1 red bell pepper
1 medium red onion
15 oz light coconut milk
2 tbsp maple syrup
1/4 cup lime juice
1/2 cup basil

Recipe Directions for Green Thai Curry

  1. puree all the ingredients up to the 1 cup of shallots.

  2. Press the water out of the block of tofu, cut into small triangles.

  3. Heat the oil and fry the tofu about 4 minutes on each side until light gold in color. Set aside.

  4. Saute the onion and red pepper in the same oil until soft.

  5. Heat the puree and coconut milk in a saucepan.

  6. Add the onions and peppers and tofu into the curry coconut mix.

  7. Heat through, reduce to consistency.

  8. Add the basil and turn off heat.
