Green Tea Pudding Recipe

My simple creation. Green tea, whole milk and sugar mixed with gelatin. It's like Panna Cotta without the cream.

Recipe Ingredients for Green Tea Pudding

600 ml whole milk
5 g gelatin
2 tbs tea
2 tbs sugar

Recipe Directions for Green Tea Pudding

  1. Bloom gelatin in a glass with about a tablespoon of room temperature water. Place the glass in a larger container of hot water to allow the gelatin to gently warm up and dissolve into liquid form.

  2. Heat 600ml of milk over medium high heat. Make sure not to scorch the milk -- it doesn't need to be boiling, but just hot enough so that the gelatin can incorporate easily without lumps.

  3. Sift matcha powder into a bowl and add sugar.

  4. Add a little of the warm milk into the matcha powder mixture and stir to ensure the lumps are gone.

  5. Add the matcha-milk mixture to the rest of the milk and stir until well incorporated. Turn off stove.

  6. Add gelatin liquid to the milk and stir for at least 30 seconds to a minute to incorporate completely.

  7. With a fine strainer, strain the mixture into your chosen ramekins, cup or bowls.

  8. Chill in the fridge for at least 2 hours until set.

  9. Serve alone or with sugar ginger syrup.
