My meat free version of split pea soup.

Recipe Ingredients for Green Split Pea (Vegan)

1 kg green split peas
5 medium potatoes
2 large carrots
1 medium onion
25 cups water

Recipe Directions for Green Split Pea (Vegan)

  1. Add water, split peas and diced onion into pot.

  2. Bring to a simmer.

  3. Peel and chop potatoes and carrots into bite size pieces.

  4. Add to pot.

  5. Simmer soup until the split peas break up and the soup is thick and rich.

  6. Add salt and pepper to taste.
