Recipe Ingredients for Green Split Pea Soup with Tofu

1 medium yellow onion
4 cloves garlic
4 cups vegetable broth
12 oz dried split peas
4 small red potatoes
2 medium carrots
16 oz soft tofu
8 oz raw spinach
1 tbsp basil
2 tsp salt

Recipe Directions for Green Split Pea Soup with Tofu

  1. Finely chop onion and garlic. Dice potatoes and carrots. Finely chop spinach.

  2. Saute onion and garlic in medium skillet until translucent. You might need an oil spray. Transfer to large pot.

  3. Add vegetable broth, potatoes, and carrots to the pot. Simmer on low for 1 hour, stirring occasionally to be sure all vegetables cook.

  4. Blend tofu and spinach together in blender until smooth. Add to pot. Add basil and salt to pot. Simmer another hour, or until potatoes and carrots are as crunchy as you'd like them to be.
