Very green, very nice with a spoonful of yogurt or quark in the middle, and a sprinkle of nutmeg.

Recipe Ingredients for Green Soup

2 medium onions
6 cloves garlic
3 tablespoons unsalted butter
1 stalk celery
2 medium zucchini
1 kg chopped frozen spinach
1 salt
1 pepper

Recipe Directions for Green Soup

  1. Saute finely sliced onions and garlic until soft.

  2. Add salt, pepper, mixed herbs, sliced celery and zucchini and cook until soft.

  3. Add spinach, mix well, and add boiling water about halfway up the pan.

  4. Cook until hot through. Correct for seasoning.

  5. Serve with a spoonful of quark or yogurt in the middle, and a sprinkle of nutmeg.
