You can make this vegan by using vegetable stock instead of chicken stock.

Recipe Ingredients for Green soup

100 g celery, chopped
280 g asparagus, trimmed and chopped
190 g baby spinach
110 g leek, chopped
600 ml water
1 tsp chicken boullion
1 T olive oil
2 T soy flour
2 c unsweetened soy milk
1/2 tsp nutmeg
10 g basil

Recipe Directions for Green soup

  1. Heat olive oil in a large saucepan.

  2. Add leeks and allow to sweat. Add celery and allow to soften.

  3. Add soy flour to create a 'roux' and then add 2 cups of the water, mixed with boullion. Stir and bring to a simmer.

  4. Add asparagus and allow to cook for about 5 minutes. Add spinach and allow to wilt. Add basil and nutmeg and stir.

  5. Turn off the heat and add soup to a blender or use a hand blender to puree the vegetables.

  6. Add soy milk and basil and blend again.

  7. Serve immediately and freeze leftovers. Makes approximately 8 cups.
