Recipe Ingredients for Green Soup

4 cups lentils, equivalent of 2 cup dried
2 onions, chopped
4 cloves garlic, chopped
2 cups raw turnip greens
2 cups raw mustard greens
3 cups mushrooms, chopped
1 lb raw spinach
8 oz broccoli sprouts
3 tbsp almond butter
3 fl oz lemon juice
1 cup basil leaves
1 tsp salt

Recipe Directions for Green Soup

  1. Cook the lentils along with the onion and garlic until tender, probably 30-45 min.

  2. Blend with hand blender.

  3. Add the greens and mushrooms, and cook for another 30 min or until they are very tender.

  4. Blend with hand blender.

  5. Take off the heat and add cashew butter, lemon juice, chopped basil leaves, and salt. Blend one more time just to make sure the texture is homogeneous.

  6. Can garnish with yogurt.
