This is a variation on the Poor Girl Eats Well recipe, created according to what I had in my fridge and garden.

Recipe Ingredients for Green Soup

16 oz Broccoli Cuts
16 oz Frozen Green Peas
20 oz Kale
2 1/2 cup Spinach
2 1/2 cup Beans, Snap, Green
3/4 medium White Onion
4 clove Garlic
1 tbsp Oil Olive Extra Virgin
1 tsp Salt, Table
5 tsp Better Than Bouillon Vegetable Base

Recipe Directions for Green Soup

  1. 1. Chop garlic and onion roughly.

  2. 2. Heat olive oil over low/medium heat and add garlic and onion, cook 3-4 minutes.

  3. 3. Add all green veggies.

  4. 4. Heat 5 cups water, add bouillon when boiling.

  5. 5. Add bouillon to veggies and cook an additional 5-ish minutes.

  6. 6. Allow to cool somewhat, then place soup in a blender and blend until it's as smooth as you wish (or skip this step and leave it chunky).

  7. 7. Add a dollop of plain yogurt and some tarragon.
