This is a hot, relatively low calorie soup, quite bland, and not very salty. Adjust salt and seasonings to personal taste. Serving size is 6 ounces or 3/4 cup.

Recipe Ingredients for Green Soup with Barley and Quinoa

2 medium raw Onion Yellow
3 cup, chopped Cabbage
8 medium stalk, raw Celery
1 large raw Zucchini
2 pepper Pepper, Serrano
0.5 cup Pearled Barley
1/4 cup Quinoa
4 serving Mrs. Dash Garlic
5 dash Salt, Table
10 cup (8 fl oz) Water
6 tsp 100% Pure Canola Oil

Recipe Directions for Green Soup with Barley and Quinoa

  1. Heat oil with 2/1 cup of water in a large soup pot. Add in the chopped onions first, then chopped Serrano pepper and seasonings. Cook at medium low heat, adding boiling water as needed.

  2. When onions have softened slightly, add in at least two more cups of boiling water along with the pearled barley and red quinoa grains.

  3. Continue to add in the other vegetables, chopped, and stir with each addition, also adding more water.

  4. Once all ingredients are in the pot, leave uncovered and cooking at medium heat until well blended, stirring often to be sure the grains do not stick to the bottom of the pot.

  5. After about 15 minutes of letting all vegetables cook at medium heat, which should mean that the pot is at a full boil by now, lower the heat to a slow simmer and continue cooking the soup for at least 60 minutes more, covered, but stirring occasionally.

  6. The longer the soup cools on very low heat, the better the flavors will blend.

  7. Serve soup hot. Save leftover soup to reheat and eat over the next few days.

  8. NOTE: this recipe makes a large volume of soup, so plan on leftovers. It is rather bland and NOT very salty to the taste.
