I improvised this salad and researched some recipes for vinaigrettes and this is what came out of it.

Recipe Ingredients for Green salad with homemade dressing

2 cups spring greens
2 cups romaine lettuce
1/2 large cucumber, sliced
1/2 large green pepper, sliced
1/4 medium jicama, sliced
1 roma tomato
8 kalamata olives
1 garlic clove, smashed
1 tbsp balsamic vinegar
1 tbsp lemon juice
2 tbsp olive oil
2 tbsp canola oil
1 tsp mustard
1 salt and pepper to taste
1 cayenne pepper to taste

Recipe Directions for Green salad with homemade dressing

  1. Wash greens and let dry

  2. Cut all vegetables as desired and place in salad bowl with greens

  3. In a separate bowl, add balsamic vinegar, lemon juice, mustard and smashed garlic and mix with a fork or whisker

  4. Slowly, add the olive and canola oils

  5. Add a pinch of salt, pepper and cayenne to taste

  6. Serve salad in separate bowls and add a dressing as desired

  7. You may serve with grilled or blackened chicken
