Rotini pasta with spinach and cheese sauce.

Recipe Ingredients for Green Rotini

7 oz wheat rotini pasta, cooked and drained
13 g (1/4 tsp) salt substitute
10 oz frozen creamed spinach, thawed
2 oz low fat neufchatel cheese
1 tbl skim milk
1/4 c reduced fat shredded fiesta blend cheddar cheese

Recipe Directions for Green Rotini

  1. Cook pasta according to package directions, using salt substitute instead of salt; set aside.

  2. Put neufschatel cheese in microwave safe bowl and microwave on high for 50 seconds. Stir and add skim milk.

  3. Put creamed spinach and cheese mixture in medium bowl. Mix well and microwave on high for 2 minutes, or use "sensor cook" for fresh vegetables.

  4. Add cheddar cheese and mix well. Add cooked pasta and mix well. Serve. About 1/2 cup per serving.
