Green Rice Recipe

This dish is common all over Italy.

Recipe Ingredients for Green Rice

2 tbsp olive oil
4 tbsp butter
1 cup minced green onions
1 cup minced fresh parsley
1 1/2 cup fresh chopped spinach
2 cups rice
3 1/2 cups Soup, stock, chicken, home-prepared
1 1/2 tsp salt
1/4 tsp black pepper
1/2 tbsp parmesan cheese

Recipe Directions for Green Rice

  1. Heat 2 qt pant with lid and add oil and 2 tbsp butter.

  2. Add onions, parsley, and spinach.

  3. Cover and cook over low heat for 5 minutes.

  4. Mix in rice and stir until translucent.

  5. Add 2 cups of hot chicken stock, salt and pepper.

  6. Cover and cook over low heat.

  7. Add remaining broth, cover, and cook another 10 minutes or until rice is tender and light.

  8. Lightly mix in the remaining butter.

  9. Garnish with cheese.
