Easy to eat and a good source of calcium, fiber and vitamins.

Recipe Ingredients for Green Potato Soup

6 medium potatoes
1 onion
160 g celery (4 stalks)
4 cups 2% milk
91 g non-fat dry milk (1 envelope)
1 cup romaine lettuce
1/4 cup fresh parsley

Recipe Directions for Green Potato Soup

  1. Peel and cut potatoes into even pieces, boil in enough water to cover until tend. Drain and allow to steam on the stove for a few minutes.

  2. Roast onion and celery, cut in quarters, in 450F oven for 30 minutes.

  3. Puree potatoes, onion, celery, lettuce, parsley and milk/milk powder in small batches.

  4. Heat in bowls in microwave to serve (add milk or chicken stock as needed). Add smoked turkey sausage for the rest of the family.
