Recipe Ingredients for Green Posole with Chicken

2 tablespoons vegetable oil
1 medium onion, finely chopped (about 1 cup)
24 oz Tomatillo Medium Salsa
4 cups low sodium chicken broth
3 unit+yield+from+1+lb+ready-to-cook+chicken whole rotisserie chicken
45 oz white hominy, rinsed and drained

Recipe Directions for Green Posole with Chicken

  1. Heat the oil in a large saucepan over high heat until hot. Reduce the heat to medium, add the onion, and cook, stirring occasionally, until softened, about 5 minutes. Add 16 oz of salsa and cook, stirring, for 5 minutes.

  2. Add the chicken broth and simmer, partially covered, for 10 minutes. Add the chicken, hominy, and remaining salsa and simmer until heated through. Add pepper to taste as chicken is likely to add a great deal of salt. To serve, ladle into bowls and let everyone garnish their own portion.

  3. Garnishes:

  4. Finely chopped onion, chopped avocado,slivered radishes, chopped cucumbers, shredded napa cabbage, and tortilla chips.
