Recipe Ingredients for Green Pea Soup

1 teaspoon olive oil
1 large onion, sliced
2 1/2 cups low-sodium chicken broth
3/4 teaspoon dried tarragon
1/2 teaspoon salt
1 Freshly ground black pepper
10 ounce of frozen peas

Recipe Directions for Green Pea Soup

  1. In a large pot, heat the olive oil over moderately-low heat.

  2. Add the onion, cover and cook, stirring occasionally, until softened. About 5 minutes.

  3. Add the broth, tarragon, salt, and a few turns of freshly ground black pepper and bring to a boil.

  4. Add the peas and cook just until defrosted.

  5. In a blender, puree the soup in 2 batches until very smooth.

  6. If serving hot, return soup to the pot and simmer.

  7. If serving cold, transfer to the refridgerator to chill.

  8. Ladle into bowls.

  9. Top with an optional swirl of non-fat yogurt or light sour cream.
