Quick easy salad..great for Bridge Game Gaggle.

Recipe Ingredients for Green Pea Salad

1 1/2 cup chicken breast, boiled (3 breasts)
2 1/4 cups peas, frozen green peas lightly thawed
1 cup mango, fresh
1 cup onion, chopped
1 cup avocado, cubed
4 T mayonnaise
1 t lemon juice
1 t lemon pepper

Recipe Directions for Green Pea Salad

  1. Boil three chicken breasts, chop. Add thawed frozen peas, mango, onion, mayo, lemon juice and mix. Fold in Avocado last to prevent smushing. Refrigerate. Tastes better when allowed to marinate in fridge a couple hours.

  2. Lite Mayo will reduce the calorie count, but not by much.

  3. Servings actually come out to about 9 oz.

  4. 1.2 Energy Density.
