Recipe Ingredients for Green Pasta Sauce

1 tbsp coconut oil
478 g zucchini
10 oz mushrooms
1 1/2 cup Fire Roasted Whole Tomatoes
1 lb spinach

Recipe Directions for Green Pasta Sauce

  1. Saute mushrooms in coconut oil. Once browned, add in chopped zucchini. Cook until softened. Add in tomatoes and bring to a simmer. Add in frozen spinach at end and cook for 10-15 minutes on med heat.

  2. Remove 1/2 of mixture and blend. Reincorporate into chunky sauce. Salt and pepper to taste. I also used a little salt-free garlic seasoning, onion powder, splash of liquid aminos.
