Bean-based pesto with pasta & veggies.

Recipe Ingredients for Green pasta bowl

150 g Buckwheat Pasta
5 c raw spinach
2 c cooked cauliflower
1/2 c cooked asparagus
1 small courgette
1/2 c Basil, Fresh
2 garlic clove
240 g great northern beans
2 T lemon juice
2 T nutritional yeast
1 t olive oil
1/2 t salt

Recipe Directions for Green pasta bowl

  1. Cook pasta according to instructions. Steam vegetables.

  2. Meanwhile, mince garlic.

  3. Add garlic and all remaining ingredients to a food processor and process until smooth, adding water if too thick.

  4. Mix pesto sauce, pasta and vegetables together.
