Green Paella Recipe

Recipe Ingredients for green paella

1 lb spinach
2 onions
3 cloves garlic
1/3 cup olive oil
2 tbsp pine nuts
1 red chili pepper
8 oz tomatoes
1 large green bell pepper
1 1/4 cup rice
1 tsp paprika
1/2 tsp saffron
3 cups veg broth
3/4 cup frozen peas

Recipe Directions for green paella

  1. Wash spinach and cook 5-7 min. Drain and squeeze. Chop.

  2. Saute onions and garlic in oil - 3-4 min. Add pine nut and pepper and cook 2 min. Lower heat. Add tomatoes and bell pepper. Cook 6 min. Add rice and saute 2 min. Season with SP. Add paprika, saffron water and enough stock to cover rice by 1 inch.

  3. Boil and simmer until rice is tender and almost all liquid has evaporated.

  4. Stir occasionally.

  5. Add spinach and peas and mix well. Simmer until peas are cooked - 5 min. Remove from heat. Cover 5 min.
