From "The Complete Vegan Kitchen." A Vietnamese savory pancake.

Recipe Ingredients for Green Onion Pancakes

2 cups wheat flour
1 tsp salt
1 serving no-salt, tsp
1 tbsp canola oil
1 cup water, boiling
1 tsp sesame oil
1/2 cup sliced green onions
2 tbsp canola oil, for frying

Recipe Directions for Green Onion Pancakes

  1. Combine flour and slat in large bowl.

  2. Add the oil, then stir as you gradually add the boiling water.

  3. Beat until dough forms. When the dough is cool enough to handle, knead for ten minutes by hand, or 6 minutes with a stand mixer, until the dough is elastic.

  4. Place dough in a bowl and cover with a damp towel;let rise for thirty minutes.

  5. Roll dough out to be 1/4 inch thick. Brush with sesame oil. Sprinkle the green onions over the dough.

  6. Roll the dough up into a tube (think jelly roll).

  7. Cut into 8 portions.

  8. Flatten each slice with your hand, and then roll out until each piece is 6 inches in diameter.

  9. Heat oil in skillet to high heat, then down to medium.

  10. Cook pancakes on each side 2-3 minutes.
