Recipe Ingredients for Green Onion Casserole

56 scallions (8 bunches), cut in 1 inch pieces
2 cloves garlic, minced
3 tbsp butter
1/4 cup whole milk (or heavy cream)
1/2 cup grated parmesan cheese
1 tbsp olive oil
2 cups breadcrumbs

Recipe Directions for Green Onion Casserole

  1. Preheat oven to 350 and butter a 1.5 quart shallow baking dish.

  2. In a skillet, cook scallions and garlic in butter over moderate heat until scallions soften, about 20 minutes. Stir in milk and .25 cup Parmesan; transfer to baking dish. In a skillet heat oil over moderately high heat until hot, but not smoking; sauté bread crumbs, stirring until golden brown, about 3 minutes.

  3. Transfer bread crumbs to a bowl and cool. Add remaining .25 cup Parmesan and season with salt and pepper. Bake, uncovered, in middle of oven until hot, 15-20 minutes.

  4. Note: May be made one day ahead and chilled, covered. Bring to room temp before baking.
