I have not tried this yet but it looks good! I may add in some chick peas for protein and red pepper for vitamins. I'm putting it in the recipie analyzer to see how terrible it is for me. I anticipate high fat content because of the olives and olive oil but that is healthy fat. The heavy cream is what gets to me. I may try fat free cottage cheese instead.

Recipe Ingredients for Green Olive Soup

25 olives Greek Cracked Green Olives
2 tbsp Extra Virgin Olive Oil
1 slice, large (1/4" thick) Onions
1 large Onions
6 grams Garlic
3 tbsp Extra Virgin Olive Oil
1/4 cup Flour, All Purpose
64 fl oz Organic Low Sodium Chicken Broth
6 oz Cottage Cheese Fat Free
2 oz Sherry
1 cup slices Carrots

Recipe Directions for Green Olive Soup

  1. IIn a large saucepan, sauté the onions, garlic, and two-thirds of the olives in the olive oil until the onions are transparent. Puree with 1 cup of stock.

  2. Heat oil in the saucepan and stir in flour and cayenne, cooking into a roux. Whisk in remaining stock, then pour in the puree. Bring to a slow boil, let thicken, then reduce heat and simmer for 20 minutes. Stir in cream, pepper, and remaining chopped olives, bring back to a boil, then simmer 5 more minutes.

  3. When ready to serve, heat to serving temperature, stir in sherry and cook for a minute, then ladle into bowls. Garnish with generous pinches of minced parsley.
