Spinach and Feta high protein muffins.

Recipe Ingredients for Green Muffins (Spinach and Feta)

1/4 cup brown sugar
1 cup soy flour
1/4 cup quinoa
2 cups spinach
2 eggs
1 1/4 cups water
1 tbsp salt
1 cup feta cheese
1 tsp baking soda
1 tsp baking powder
2 tbsp olive oil

Recipe Directions for Green Muffins (Spinach and Feta)

  1. Crush quinoa grains in blender. Mix soy flour, brown sugar, quinoa, 1 tbsp of olive oil, baking soda, baking powder, eggs, feta cheese. In blender, blend 2 cups of spinach and 1 1/4 cups of water. Mix everything together until batter is formed.

  2. Grease the muffin baking tray with remaining olive oil. Bake for 45 minutes?

  3. I am not sure how it will turn out - just baking it now. What can I say, I'm in a weird mood. :)
