Recipe Ingredients for Green Lentils with Fennel and Scallions

1 cup green lentils
2 cups water
2 onions, diced
1 fennel bulb, diced
3 cloves garlic
5 scallions, diced
1 teaspoon dried tomato, powdered
1 tablespoon virgin olive oil
1/2 teaspoon sea salt
1 black pepper

Recipe Directions for Green Lentils with Fennel and Scallions

  1. Clean lentils and soak in water for 2-3 hours.

  2. Put oil, onions and fennel bulb in the pot, add salt and pepper and cook for five minutes. Add lentils, dried tomato and water, lower the heat and cook until lentils are soft enough.

  3. Add scallions, stir and serve.
