Green Lentil Soup Recipe

Lentil soup is an eastern Mediterranean classic, varying in its spiciness according to region. Red lentils make equallygood substitutes for the green lentils used here.

Recipe Ingredients for Green Lentil Soup

1 cup green lentils
3 tablespoons olive oil
3 onions, finely chopped
2 garlic cloves, thinly sliced
2 teaspoons cumin
1/4 teaspoon ground turmeric
2 1/2 cups low sodium chicken stock
2 1/2 cups water
2 tablespoons chopped cilantro
1 salt and pepper

Recipe Directions for Green Lentil Soup

  1. Put the lentils in a saucepan and cover with cold water. Bring to a boil and boil rapidly for 10 minutes. Drain.

  2. Using a nonstick pan heat 2 tablespoons of the oil in a pan and saute two-thirds of the chopped onions with the garlic, cumin and turmeric for 3 minutes, stirring. Add the lentils, stock and 2 1/2 cups water. Bring to a boil, reduce the heat, cover and simmer gently for 30 minutes, until the lentis are soft.

  3. Saute the remaining onion in the remaining oil until golden.

  4. Use a potato masher to lightly mash the lentils ad make the soup pulpy. Reheat gently and season with salt and pepper to taste. Put the soup into bowls. Stir the chopped cilantro into the sauteed oinon and sprinkle on top of the soup.
