Recipe Ingredients for GREEN Lentil Soup

2 cup Green Lentils
6 cups water
3 celery stalks
4 small carrots
3 garlic cloves
3 Peppers, Hot Chili, Green
1/4 cup wild rice
1/4 cup quinoa
1 tsp cayenne
1 tablespoon sunflower oil

Recipe Directions for GREEN Lentil Soup

  1. In large pot add 3 cups water, lentils, 1 strip Kombu. Boil 20 minutes

  2. While other pot is going, in sepearate pot add oil. Saute chopped celery, carrots, garlic cloves for 15 minutes.

  3. Add saute to lentils. Add Diced chili. Add Quinoa, Wild Rice, & Ceyene. Simmer 10 minutes.

  4. Serve with slice of toasted bread (if desired)
