Eaten over rice with yogurt, it's a very satisfying meal.

Recipe Ingredients for Green Lentil Curry

1 tsp ginger
1 garlic clove
2 tsp coriander
1 tsp cumin
3 tbsp olive oil
1/4 tsp cumin seeds
1 small onion
1 tbsp tomato paste
1 1/4 cups dried lentils
1/4 tsp turmeric
4 ounces green beans
4 ounces kale
1 carrot
1 cup cilantro
1/2 tsp pepper
1 cup rice
2 cups plain yogurt

Recipe Directions for Green Lentil Curry

  1. In a small bowl, combine the ginger,

  2. garlic, coriander and ground cumin. Stir

  3. in 1/4 cup of water to make a paste. In

  4. a small skillet, heat the oil until

  5. shimmering. Add the cumin seeds and

  6. cook over moderately high heat for 5

  7. seconds, just until sizzling. Add the

  8. shallot and cook, stirring, until lightly

  9. browned, about 1 minute. Add the

  10. spice paste and let cook until most of

  11. the liquid has evaporated, about 2

  12. minutes. Stir in the tomato paste and

  13. cook until thick, about 1 minute longer.

  14. In a saucepan, combine the lentils with

  15. the turmeric and 5 cups of water; bring

  16. to a boil. Cover partially and simmer

  17. over low heat for 20 minutes, until the

  18. lentils are barely tender. Add the green

  19. beans, kale, carrot, three-fourths of the

  20. cilantro and the cayenne and season

  21. with salt. Cook until the lentils and

  22. vegetables are tender, 15 minutes.

  23. Scrape in the spice paste and the

  24. remaining cilantro. Simmer for 5

  25. minutes, then serve.
