Recipe Ingredients for green goddess pasta

4 cloves garlic
3 tbsp coconut oil, refined
6 tbsp Smart Balance 67% Buttery Spread
1/2 tsp salt
8 oz uncooked whole wheat spaghetti
2 zucchini, cut into 1/4 in. slices
2 1/2 cups broccoli
4 oz kale, 1/2 in strips
1/2 tsp pepper
1/4 cup pine nuts

Recipe Directions for green goddess pasta

  1. over low heat combine minced garlic and coconut oil until garlic starts to brown about 3 min.

  2. remove from heat, add the butter, and set aside.

  3. bring water to a boil and add pasta, cooking according to directions.

  4. 5 min. before pasta is done stir in broccoli, zucchini, and kale.

  5. cook until veggies are tender and pasta is done.

  6. drain pasta reserving 1/2 cup of cooking water.

  7. return to pot and add the 1/2 c. water, pepper, garlic butter, pine nuts, and salt.
