I used 2 boxes each of Green Giant Garden Vegetable Medley (100 cals each) and Green Giant "Healthy Weight" (180 cals each) frozen vegetables and a can of Green Giant niblets (that's yalla corn to you & me) to make this healthy, protein-filled, quick & yummy soup.

Recipe Ingredients for Green Giant Vegetable Soup

1 medium onion
3 cloves garlic
2 tsp salt
2/3 c sugar snap peas
2/3 c red potatoes
2/3 c red bell peppers
1/2 c carrots
1/2 c edamame
1/2 c black beans
1/2 c sugar snap peas
14 oz yellow corn
1 1/2 c long grain rice
3 c bouillon, tomato
4 c bouillon, vegetable
5 c water

Recipe Directions for Green Giant Vegetable Soup

  1. Put water in deep stock pot (the big one, folx) & add the bouillon squares and salt.

  2. Chop onion & garlic and add to pot.

  3. Add frozen vegetables.

  4. Add corn (I used one can).

  5. Add rice.

  6. Bring the soup to a boil and lower the temperature.

  7. Simmer on medium low for about 30-45 minutes, stirring frequently to make sure the rice doesn't stick to the bottom and burn.

  8. Add water as needed to keep it soupy and not too rice-y.

  9. This made 16 cups of soup for me; it's really really really really good.

  10. I would have put in some chiles arboles but Becci (my daughter) just got her lip pierced and can't eat spicy foods for a while - apparently that hurts. So... let that be a lesson to you! :-)
