Kale with scrambled eggs and brown rice

Recipe Ingredients for Green Eggs & Rice

2 eggs
1 c kale, chopped
2 c brown rice, cooked
1 tbsp olive oil
1/2 tsp garlic powder

Recipe Directions for Green Eggs & Rice

  1. Saute kale in olive oil with garlic powder.

  2. Push kale to edges of pan and crack two eggs in the center, scrambling softly.

  3. Before eggs set completely, stir kale into eggs.

  4. Add brown rice and combine.

  5. Serve hot with a dash of liquid aminos or soy sauce.
