Healthy Fat Alternative Egg Salad/Guacamole No mayo needed. Full of Flavor!

Recipe Ingredients for GREEN EGGS

3 Egg white, (Hardboiled, discard yolk)
1/2 c avocado
1 tsp lemon, juiced
1 T onion, red, minced
1/8 tsp salt, sea
1 black pepper, ground

Recipe Directions for GREEN EGGS

  1. mash:

  2. Hard Boiled Eggs (whites only), 1/2 c. avocado, 1 tsp lemon juice, 1 T red onion, season to taste with sea salt and generous ground pepper.

  3. Chill for 15 minutes. Serve alone, on greens, with whole grain pita chips or on top of (1) slice of toasted, whole grain bread!
