A poached egg on top of sauteed spinach and roasted tomatoes.

Recipe Ingredients for Green Eggs

1 egg
1 cup fresh spinach leaves
1/2 cup grape tomatoes
1 clove garlic
1 tsp olive oil

Recipe Directions for Green Eggs

  1. Put olive oil in small skillet. Add chopped garlic and heat until sizzling. Using a rubber spatula, scrape garlic and oil in pyrex dish sprayed with pam. Add tomatoes to dish, toss to coat, and put under broiler for 8-10 minutes. Check evert few minutes to prevent burning.

  2. Meanwhile, put spinach greens in same skillet you heated garlic in. Cover and turn on low.

  3. Fill small saucepan with 4" water. Bring to boil, then turn down to simmer. Gently crack open egg and slip into simmering water and cover. Cook to preferred doneness (about 2 minutes for medium yolks).

  4. Put roasted tomatoes in heated pasta bowl. Arrange wilted spinach over tomatoes, then top with poached egg. A quick grind of salt over the egg and its ready to eat - YUM!!
