no carb, low calorie frittata which is nevertheless filling, tasty and nutritious. Great for brunch, lunch or dinner, with mustard and a salad. Serves two, or four as a starter.

Recipe Ingredients for Green Eggs and Ham Frittata

1/2 onion, grated
1 small apple, grated
1 1/2 cups kale, precooked
10 grams bacon
1 slice ham, chopped
1/2 teaspoon salt
3 eggs

Recipe Directions for Green Eggs and Ham Frittata

  1. Grate the apple and onion, and add in a bowl with the chopped, pre-cooked kale. Squeeze the liquid out.

  2. Fry the two slices of bacon in a frying pan large enough for the whole frittata. When fried, crumble the bacon and add to the vegetables, along with chopped ham, the eggs and the salt. Mix with a fork until the whites and yolks of the eggs are blended.

  3. Heat the pan still oiled with bacon grease, pour in the frittata mixture, and put a lid on it. Leave to cook for 10 minutes, until the top stops being runny. Slide it onto a plate, cooked side down. Flip the frittata into the pan, cooked side up. Leave to fry for another 5 minutes, or until the egg seems to be cooked.

  4. Serve with a salad, and mustard.
