Recipe Ingredients for Green Egg Breakfast

1 tsp olive oil
2 1/2 cup chard
1 egg
1 slice sourdough bread
1/2 tsp smart balance butter

Recipe Directions for Green Egg Breakfast

  1. Coat medium saute pan with 1 tsp olive oil.

  2. Heat over medium heat.

  3. Add 2.5 cups de-veined and chopped chard or other greens.

  4. Toss and stir until reduced to about half original size

  5. Salt and pepper to taste

  6. Push to side and fry egg (sunny side up)

  7. Serve egg over greens with a slice of lightly buttered toast.
