Recipe Ingredients for Green Curry Chicken

8 oz Chicken, Breast, Meat Only
1 serving Mae Ploy green curry
1 cup Coconut Milk
1 serving kaffir lime leaf
1 cup, chopped Peppers, Sweet, Red
2 cup pieces Mushrooms
1 serving Thai Eggplant
1 cup Fancy Mixed Chinese Vegetables
1 tbsp Coconut Palm Sugar
1 tbsp Coconut Oil, Unrefined, Organic
1 serving Thai Basil

Recipe Directions for Green Curry Chicken

  1. 1. Saute the green curry paste with oil over medium heat until fragrant, add 1/2 cup of coconut milk and stir until the oil surfaces.

  2. 2. Add the chicken and kaffir lime leaves, continue cooking until the chicken is almost done.

  3. 3. Add the remaining coconut milk, palm sugar and fish sauce. Bring to a boil.

  4. 4. Add the bamboo shoots, cook for 5 minutes or until the bamboo shoots are softened.

  5. 5. Add the basil, stir and remove from the heat.
