Freezeable soup that can be used as a hearty meal or as a sauce for rice, potatoes, barley or steamed or roasted vegetables. From the cookbook, Vegan Meals for One or Two by Chef Nancy Berkoff

Recipe Ingredients for Green and Creamy Soup

1 tbsp vegetable oil
1 cup chopped onion
1/2 cup chopped celery
6 cups vegetable broth
1/2 cup dried split peas, rinsed
1 tsp bay leaf
2 cup diced yellow squash
1 tsp dried basil
1 1/2 cup thawed, frozen chopped spinach, drained
1 tbsp dried parsley

Recipe Directions for Green and Creamy Soup

  1. Heat the oil in a large sauce pan.

  2. Saute onions and celery until soft, approximately minutes.

  3. Add vegetable broth, split peas, and aby leaf.

  4. Bring to a quick boil, reduce heat, and cover.

  5. Simmer for 30 minutes.

  6. Add squash and basil and simmer for 5 minutes.

  7. Remove bay leaves and place soup in a blender.

  8. Blend until smooth.

  9. Put soup back in pot, add spinach and parsley, and heat for 5 minutes.

  10. Serve hot or allow it to cool before freezing.
