Large pot of vegetable soup fairly low cal. All the food groups together. Watch the carbs e.g. crackers or corn bread while eating.

Recipe Ingredients for Green Chile Vegetable Soup

3 lbs. ground beef
28 oz. diced tomato
1 large onion
4 cups beef broth
28 oz. water
4 small squash
1 3/5 lb. potatoes
3/4 head cabbage
12 oz. frozen corn
8 oz. chile
2 stalks celery
8 small carrots

Recipe Directions for Green Chile Vegetable Soup

  1. Brown beef with salt, pepper and granuated garlic in small amount of olive oil, once browned remove from dutch oven and drain.

  2. Add celery, onions and carrots to pot and deglaze the pot with small amount of broth.

  3. Cook for about 10 minutes over low heat.

  4. Add potatoes, cabbage, squash add diced tomatoes, chiles, broth and water to almost fill pot.

  5. Cook for 2 hours and add corn.

  6. Simmer for another hour
