Recipe Ingredients for Green Chile Stew

2 pounds beef, cubed
3 tbsp. olive oil, extra virgin, divided
4 cloves garlic
2 large onions, chopped
3 cups green chile, chopped
2 cups tomatoes, diced
4 cups water
1 tsp. salt

Recipe Directions for Green Chile Stew

  1. Brown beef in 2 tbsp oil. (My recipe calls for dredging the beef in flour before browning, but I choose to skip that to save the calories.) Set aside in a bowl.

  2. Saute onion and garlic in remaining tbsp oil.

  3. Add beef and remaining ingredients to pan, reduce

  4. heat, and simmer for 1 hour.

  5. If you'd like to add potatoes, simmer first half hour, then add 1 peeled medium to large peeled and diced potato. Simmer the additional half hour.

  6. Excellent with corn bread, tortillas quesadillas or all alone.
