Recipe Ingredients for Green Chile Sauce

1 T olive oil
1 medium onion, diced
1 tsp garlic, minced
1 tablespoon flour
1/2 cup chicken stock
6 Cubanelle peppers (or Anaheim), roasted, peeled, seeded, and diced
1 Poblano pepper, roasted, peeled, seeded, and diced
1 small tomato, diced

Recipe Directions for Green Chile Sauce

Heat a medium sauce pan on medium-high head for about two minutes. Add about one tablespoon of olive oil to hot pan, and wait another minute. Add onions. Sautée until soft, then add tomatoes. Once the juice starts to release from tomatoes, add garlic. Cook another two minutes. Add flour and cook for three - five minutes. Keep stirring. Add hot chicken stock to onions and garlic very slowly and keep stirring. Bring to a simmer and then add the peppers and tomatoes. Cover and simmer for 30 minutes to an hour. Add salt and pepper to taste.
