Recipe Ingredients for Green Chile Rellenos

6 pepper Peppers, Hot Chili, Green
1 tbsp Salt, Table
3 cup, shredded Monterey Cheese
3 large Egg, Whole
0.5 cup Wheat Flour, White, All-purpose, Enriched, Unbleached

Recipe Directions for Green Chile Rellenos

  1. Roast and peel the chiles.

  2. Make a lengthwise slit in each one, being careful not to break it, and remove the seeds and membranes.

  3. Soak the chiles in water to cover with 1 tablespoon salt and the vinegar for 20 minutes.

  4. Rinse, drain and set aside.

  5. Beat the egg whites until they form stiff peaks, then stir in the egg yolks one at a time.

  6. Spread the flour on a plate, turn each chile in it to coat lightly, then dip into the beaten eggs, so that the chile is completely coated.

  7. Heat 1/2 inch oil in skillet.

  8. When hot, add the chiles one or two at a time and fry on each side until lightly browned.

  9. Drain on absorbent paper.
