Homemade green chile using lean pork and fresh roasted chiles. Use less pork to lower sodium and fat content.

Recipe Ingredients for Green chile (w/Pork)

16 ounces pork loin, boneless
3 tablespoons olive oil
3/4 large onion, chopped
3 Garlic cloves, minced
4 tablespoons flour
1 1/2 cups Green chilies
822 grams (1 can) tomatoes, no salt added
3 tomatillos (roasted and blended)
3 1/2 cups water
1 tablespoons cumin
1 tablespoons oregano
1/2 oz. (1 Tablespoon) kosher salt, to taste

Recipe Directions for Green chile (w/Pork)

  1. Bring water to simmer, add pork. Simmer for 45 min.-1 hr.

  2. While pork is simmering, heat olive oil, add onions, then garlic, then flour. Wait for flour to brown but not burn. Then add chiles, tomatoes and blended tomatillos.

  3. Bring pork back to simmer, add chile mix. Simmer for about 45 min-1 hr.

  4. If chile needs more thickening, mix together hot water and flour, then add to chile.
