Great way to have enchiladas without the wrapping

Recipe Ingredients for Green Chile Chicken Enchiladas

4 cups white meat chicken
1 large onion, chopped
1 jalapeno pepper
1 yellow bell pepper
10 corn tortillas
1 cup green chilies
1 cup enchilada sauce
2 cups cheddar cheese

Recipe Directions for Green Chile Chicken Enchiladas

  1. Shread cooked white meat chicken to make 4 cups

  2. dice onion, jalapeno pepper and yellow bell pepper

  3. saute onion and peppers in a little olive oil until tender

  4. add enchilada sauce, a little flour and water to make a thick sauce

  5. add green chilies and chicken

  6. cook on low until thicken and heated through

  7. Assemble by putting 5 corn tortillas on the bottom of a 13x9 baking dish.

  8. top with 1/2 of the chicken mixture and 1/2 of the cheese

  9. repeat the process

  10. bake at 350 degrees for 25 minutes

  11. let rest for 15 minutes before serving
