Recipe Ingredients for Green Chile Chicken Enchiladas

4 fat free flour tortillas
4 oz shredded cheese
4 tsp fat free plain yogurt
8 oz green chile
1/2 lb skinless, boneless chicken breast
8 oz fat free refried beans
1 bell pepper
1 tbsp olive oil

Recipe Directions for Green Chile Chicken Enchiladas

  1. Pan fry chicken chunks.

  2. In pan, lay two tortillas in bottom then layer: cooked chicken, chopped bell peppers, sauce, half of cheese, beans, remaining tortillas, remaining cheese.

  3. Bake in oven for 10 minutes.

  4. Top with greek yogurt and any additional toppings such as lettuce or tomato.
