Green chile, chicken & brown rice stew

Recipe Ingredients for Green Chile, Chicken & Brown Rice Stew

4 cup Green Chile Stew
2 cup Short Grain
32 oz Fresh Boneless Skinless Chicken Breasts
2 cup Chicken Stock

Recipe Directions for Green Chile, Chicken & Brown Rice Stew

  1. Cover 2 cups brown rice in water. Soak for 20 minutes.

  2. While rice is soaking, boil 2 pounds skinless, boneless chicken breast until cooked.

  3. Remove chicken from pot and allow to cool, reserving 2 cups of chicken stock in pot.

  4. Once rice has soaked 20 minutes, add to 2 cups chicken stock.

  5. Pour in jar of Cookwell's Green Chile Stew. Stir.

  6. Cook on medium-high heat until rice mixture comes to boil. Then lower heat and simmer.

  7. Shred chicken and add to rice mixture.

  8. Cover and simmer approximately 40 minutes (for al dente rice), stirring occassionally.

  9. If you prefer your rice softer, cook longer. You may have to adjust the amount of chicken stock/water you add if you cook longer.
